  • 500 g sourdough Discard
  • 50 g sugar com
  • 2 Egg

Instruction

1 Mix the warm milk, yeast, and sugar in a stand mixer bowl, blending carefully until the yeast and sugar dissolve in the milk.

2 Remove the bread from the mixer machine and place it on the surface. Ensure that your hands are wet because it can be too sticky for dry hands to work with, Divide the dough into 12 pieces. Shape each portion into a circular form or sphere by folding the dough underneath itself or placing it on the counter and pulling it towards you while maintaining tension.

3 After this, place a cover over the bowl and leave it for at least 2 to 2.5 hours in a warm place until it has doubled its size.

4  Then cover the bowl with the plastic bag and set it aside for an hour to shine, your home temperature

5  When the dough is doubled, then take it to your kitchen counter for shaping, then divide the dough into the number of buns you want to make, I usually make 8 from this recipe,, and each bun is around 138g, if you want to make  smaller buns then divide it into 12 pieces and each will be of 90g

6 So divide the sourdough into 8 perfect pieces  

7 Then shape each piece of the dough into a bun , you can also pull the edges into the center to form  a well-rounded dough

 

8 Place your dough buns into a tray and cover it with a plastic bag, then  set aside for at least 30 minutes so they will be plump and well-rounded

9 Set the oven to 180C/350C

10  To make the buns More yummy brush on the buns with egg white and sprinkle 

11  Bake for around 25 minutes 

12  Cool on a wire rack
