- 4 tablespoons (56 g) butter (melted)
- ½ cup (110 g) light brown sugar
- ½ cup (60 g) all-purpose flour
- 2 teaspoons ground cinnamon
- 1 cup (120 g) chopped pecans (optional)
Cinnamon Sugar Filling
- ⅓ cup (73 g) light brown sugar
- ⅓ cup (40 g) all-purpose flour
- 2 teaspoons ground cinnamon
Sourdough Coffee Cake Batter
- 8 tablespoons (113 g) butter (softened)
- ½ cup (110 g) light brown sugar
- ½ cup (100 g) granulated sugar
- 2 large eggs
- 2 teaspoons (10 g) vanilla extract
- ½ cup (115 g) sour cream
- ½ cup (125 g) sourdough starter discard
- 1 cup (240 g) buttermilk
- 1 teaspoon (5 g) fine sea salt
- 2 teaspoons baking powder
- 2 cups (240 g) all-purpose flour
Instruction
CRUMBLE TOPPING
- So first you need to melt the butter in a decent size of bowl and stir the light brown sugar it and cinnamon until well combined, then Add the flour and pecans and once again stir it until the mixture comes together, then set it aside and let it coo
CINNAMON SUGAR FILLING:
Mix the flour and light brown sugar in a small bowl and set aside while you can make your coffee cake
SOURDOUGH COFFEE CAKE BATTER
- So you need to preheat your oven to like 350 F, then you need to Grease a 9″ x 9″ baking pan.
- Then take a large bowl and use a spatula to cream the butter, granulated sugar, and light brown sugar until fully combined, then add eggs, vanilla extract, sour cream, sourdough starter, milk, salt, and baking powder to the bowl and mix it well and then you need to add flour and then mix it until well combined.
- Pour half of the cake batter into the baking dish and sprinkle the cinnamon sugar mixture evenly across the surface of the batter, then carefully pour the remaining batter over the cinnamon sugar mixture to cover, use a spatula to spread the batter on the same level, break the crumble topping with your finger and sprinkle it on the top of the coffee cake.
- Then you just need to bake it for 40-45 minutes or just insert a toothpick in the middle of the cake and if it comes out clean then the sourdough discarded coffee cake is ready to serve
