  • So first of all you need to take a small bowl and combine all the ingredients like sourdough discard, vinegar and mix it until it looks smooth, then you need to place the bowl in the refrigerator until you are ready to use
  • Then take a large bowl and mix all the ingredients, flour, salt , and sugar  , then add the cubed butter and use your pastry cutter to mix until you  have a coarse mixture , if you want to mix it by hand then use your fingers to press and smash the cubed butter and coat it with flour, butter chunks, and most important don’t overmix
  • Then you need to add sourdough discard the mixture and again use the pastry cutter to mix the dough just until combined,
  • Add the dough mixture onto a smooth work surface and gather the dough together, but you need to be careful because we are not kneading the dough just gathering it into a ball, if you think the dough is too sticky then add a sprinkle of flour, the dough should not be sticking to the work surface.
  • Then you need to divide the dough into two pieces wrap each in plastic wrap and press it into a disk shape, then set it up in the refrigerator for at least 2 hours.
  • After chilling the dough, transfer one of the dough disks to a lighter-floured surface, and use a lightly floured rolling pin to evenly the rolled dough into the shape needed for your dessert recipe.
  • Rolling the dough onto your rolling pin is a way to move your crust to the pie pan or baking sheet. Grasp one side of the dough circle with the rolling pin, then roll the pin gently to wrap the dough around itself, adding a little more flour to prevent sticking if necessary. Transfer the pin to your pie pan or baking sheet, position the edge of the dough at the rim of the dish, and unravel the dough from the pin.
